9½ inch blade made from multi-layered, Damascus style steel containing Rockwell 60º - 62º hard steel for a superbly sharp edge. Tojiro Senkou 24cm Chef's Knife. Tojiro Senkou's superbly sharp blades will certainly help to illuminate and inspire your cooking creations. The blades are manufactured using the same techniques as used in the construction of 'kasumi-nagashi' or 'floating mist' style Samurai swords.
